Our blades are hand-forged by a family in Sakai, Osaka who have been making knives for 103 years. They know how to create beautiful knives that last a lifetime.

BLADE: Paring
This is an all-rounder, small utility blade. We have made this slightly longer than normal so it can take on more tasks in the kitchen.

HANDLE: Made from ocean plastic found in Northern Scotland
We collected 20kg of fishing ropes, fishing gear and hard oceans plastic that were washed up on the coasts of the North West of Scotland. The handles will all be made out of this material.

STEEL: Shirogami 2 (white paper steel)

This has very high-carbon steel content, impressive purity and a razor sharp edge. Easy to sharpen.

FINISH: Kurouchi

This roughly translates as 'blacksmith's finish'. This is a traditional technique which gives the blade a black finish. This is done to reduce the reactivity on carbon steel knives.
